CARROTS IN HARISSA FOR MARCUS KENNEY

We barter with Marcus Kenney for artwork, partially paying him in the form of what we affectionately refer to as “Grey Bucks.” He and his wife, Sarah, are regulars in the Diner Bar and in our dining room. Marcus is a great eater with a real Southern palate and he loves spice. These carrots are perfect for him.—MB

HARISSA PASTE

3 ounces dried ancho chiles, seeded and stemmed

3 ounces chiles de árbol, seeded and stemmed

3 ounces guajillo chiles, seeded and stemmed

7 sun-dried tomatoes

1½ teaspoons caraway seeds, ground

1½ teaspoons ground cumin

2 red bell peppers

6 cloves garlic

3 teaspoons ground coriander

Kosher salt

1 cup olive oil
